Every year I look forward to the day AFTER Thanksgiving for the most amazing feast that has ever touched the tongue. No, it's not the sandwich made from the leftover turkey, stuffing, cranberry sauce, one slice of cheddar cheese and gravy, which admittedly is also incredibly delicious. No, this meal requires not one but two turkeys; one for the bones and one for the meat. Yes, it is Turkey Pho. Merging Vietnamese and American traditions, Thanksgiving Turkey Pho may be more American than traditional American Turkey dinner. I mean aren't we all supposed to be about melting pots and combining traditions? Well, to me, nothing says America more than a huge pot of turkey bones and turkey broth, turkey tripe with Thai basil, and Sriracha. Yum.
